轉換這些訊息的神經元 它們已凋亡 所以我們必須找出下游有哪些
是我們可以影響的 來幫助他們 我們發現大腦和胰臟間是有連結的 而胰島素 這個主導能量儲存的荷爾蒙
是這些小朋友變胖的主要因素 所以我們試著以阻止胰島素分泌的藥
來治療這些病患 令人驚訝的是 他們不止減重 他們同時自動自發地開始運動 所以我們從這研究了解到 行為其實是受到生化反應影響的 當你改變了生化反應 行為也隨之改變 那是一個很大的啟發 那大概是在1995年時 然後問題變成 大部份人沒有腦瘤

對人類健康是有害的 而這跟它有多少卡路里無關 就這角度來說 糖和酒精很像 酒精的危害
不是因為它的卡路里含量 即使它每克含有高達7大卡 酒精的危害
也不在於它會使人變胖 事實上
有很多酗酒的人是骨瘦如柴的 卻病得很嚴重 酒精的危害來自於其分子本身 在於它分子本質上的毒性 危害在於酒精分子的作用
在於身體是如何代謝它的 所以當你喝入酒精 第一 有些會跑到腦部 顯然地 我們慶祝這種效果 但很明顯地 如果你經常、長期如此
腦部會受到傷害 同時 酒精也會跑到肝臟 在肝臟中被代謝 而問題在於
當酒精在肝臟中被代謝 當酒精過量時
它會被轉變成脂肪 而肝臟脂肪是慢性代謝疾病的
最主要因素 而所有酒精造成的疾病 第二型糖尿病、脂肪肝
和腦部的病變 現在也發生在兒童身上 而他們不喝酒的 但是他們糖吃得可多了 我們發現 糖類裡面一種很甜的分子
叫果糖 糖類是由兩種分子組成的
葡萄糖和果糖 葡萄糖是生命的能量來源 這星球上每個細胞
都燃燒葡萄糖產生能量 葡萄糖重要到 如果你不吃葡萄糖
你的肝臟會自行製造葡萄糖 它用脂肪和蛋白質為原料來製造 這作用叫糖質新生 所以你無需攝取葡萄糖才能生存 你需要有一定的血糖濃度才能存活 但無論你有沒有吃葡萄糖
你的肝臟會確保血糖濃度 這也就是為什麼
因紐特人、倫迪爾人、托克勞、馬賽人 他們沒吃碳水化合物
血糖水平卻仍然正常 因為你的身體會自行製造 但果糖呢
果糖僅是人類生命演化過程殘留的功能 對任何動物也是如此 那是來自我們原核 或說是細菌祖先的
演化遺跡、一種留存的生化反應機制 來自我們植物界的祖先 我們無需靠果糖生存 沒有它我們也活得好好的 我們的確有能力代謝
少量的果糖 正如我們擁有代謝
少量酒精的能力 而當我們超過了那個量 我們的肝臟對過量果糖的反應
跟對過量酒精的反應如出一轍 會產生脂肪肝
然後演變成慢性代謝疾病 不止如此 我們現在發現
果糖阻礙大腦內的神經膠細胞工作 這細胞是供給神經元營養的 所以它似乎也對大腦有不良影響 所以你可以看出
這跟卡路里無關 跟果糖有多少卡路里數無關 而是果糖在生化上的特性 而且和酒精的特性非常相像 而正是因為這些原因 這個分子 果糖
所以糖是具毒性的 跟它的卡路里無關 糖就是兒童的酒精 兒童沒喝酒
卻得到這種酒精造成的疾病 而原因在於
糖就是他們的酒精 這是我們承擔不起的 太驚人了 我們來談談從你的專業角度來看
目前這個造成的影響 現在美國兒童的健康狀況如何 我們現今在醫療整體上
有個大麻煩 我們有兩個陣營 有一方陣營可說是當家做主
已經有45年之久 而那個陣營基本上就是信奉那個前提
一卡就是一卡 一切都和卡路里有關 也就是說 如果你過重 要嘛就是你吃太多
不然就是運動太少 或兩者皆是 就那麼簡單 就是個單純的數學問題 而任何人都算得出來 這讓我們 姑且稱之為
提供輔助服務的專業人士 也可以計算出來 但這和算術加減無關
這和科學有關 問題不在卡路里的物理學 而是特定食物的生物化學反應 以及身體如何處理它的問題 而並不是所有人
都了解這部份的科學 所以現在產生的是一股
你可稱為 迅速擴展的新營養學 基本上要來終結之前的假說 而且 引發了爭議 是一場革命 一場至今尚末見血的革命 然而 這的確是一場
在營養學和健康領域的革命 而就在最近 它達到了高峰 一部份原因是因為
我們現在發現 食品工業和糖類業者 45年前 以非常差勁的手段
操弄營養知識和科學研究 導出了這些前提 包括
都是卡路里的影響 都是飽和脂肪害的 都跟你吃太多、動太少有關 我們現在知道那是謠言了 我們現在知道那是個錯誤了 要人們丟棄

結果是一半一半 有個完美的例子
是2013年表現的一個期刊文章 討論的是
含糖飲料是否讓人變胖 文獻中有18個不同的研究數據 其中6個
研究經費是由飲料企業贊助 而另外12個
是獨立的研究經費 結果
在6個由飲料企業贊助的研究中 6個中的5個 研究結果是
含糖飲料不會讓人變胖 而另外12個獨立經費的研究 12個中的10個 研究結果是
含糖飲料的確會讓人變胖 若你算一算 統計一下 非常明顯地 任何由食品產業贊助的研究
有嚴重的偏見 他們怎麼逃過的 難以想像 他們逃過
因為他們就是能逃過 他們能逃過因為 他們有錢
而人們想要錢 我的死對頭
多倫多大學的 John Sievenpiper 博士 正如他在紀錄片
「Suger-coated」裡所說的 科學家想要做好的研究
而政府刪減研究經費 而科學家還是想做好的研究
哪裡有錢他們就會往哪裡去 如你所知
我們比較聚焦在汽水和飲料企業 它們是特別差勁嗎 所以問題是 誰是罪魁禍首 答案是
它們都是 各自以不同的方式 汽水和運動飲料
基本上就是糖而已 汽水和運動飲料裡
沒有任何成份是你必需的 而這些企業說
你需要糖才能夠生存 而這是事實
你需要血糖才能夠生存 但我們剛已討論過了
你不需要飲食中的糖才能生存 如果你丟棄之前的假說 你不需要糖就能活 那問題就回到
到底汽水裡有什麼是我們需要的 汽水裡面到底有什麼是生存所需 裡面有 糖 不是必需的 裡面有 咖啡因 不是必需的 裡面有焦糖色素、磷酸、鈉 你在一般食物中都能大量取得 所以我提出的問題是
糖算是食物嗎 如果糖不是食物
那汽水就不是食物 而如果糖不是食物 那我們目前食品加工這個環境
到底在幹麻呢 他們曾經跟你連絡嗎
還是誇張地說 試圖追殺你嗎 你曾經感受到
身為反方發言人的壓力嗎 這麼說吧 我曾被食品工業誹謗攻擊 當我在英國
我上BBC的節目講了10分鐘 而當他們讓
食品和飲料聯盟的人說話時 聯盟代表說

他們該如何參與 這對他們有什麼影響 如果他們真的一點糖都不吃 那這對他們個人來說是沒有影響的
但我保證那並不是真的 而原因在於 含糖飲料只佔所有含糖食品的37% 16%存在於我們說的甜食、點心
像冰淇淋、糖果、蛋糕 那代表在美國飲食中
有49%的糖在我們不知道有添加的食品裡 比如 沙拉淋的醬 烤肉醬 漢堡的麵包 漢堡肉 你去餐廳
你可不知道他們裡面放了什麼 所以那是會影響到你的
可能是以你無法察覺的方式 它也會透過整個社會影響你 因為這是要花錢的 因為每年有18萬人死亡 根據「循環」期刊去年的文章
因含糖飲料而死亡 這造成社會安全基金的支出 這造成醫療保險和醫療補助的問題 社會安全基金是一種龐氏騙局

雖然是合法的 但還是龐氏騙局 為了要讓社會安全基金能夠運作
必須有健康的年輕人在金字塔底端付錢 然後這些虛弱的老年人
才能夠在金字塔頂端領錢 而這些老年人的人數遠比年輕人少 但若年輕人開始生病會如何呢 若他們病得很嚴重
而開始領取殘障補助呢 若他們付不出錢
而甚至是在領錢呢 整個金字塔就垮了 更有甚者 你會在乎是因為 我們都有聽過曠職
但大部份人都沒聽過假性出席 假性出席是指人們有去上班
但卻無法完成工作 因為他們在廁所裡一直尿
因為他們患了第二型糖尿病 所以你可能需要幫他們
做他們的工作 那代表雇主
第一 不能炒了他們 第二 雇主必須支付
因為生病人口增加而提高的醫療保險費 那代表雇主無法雇更多人
來幫你完成工作 所以你需要幫生病的人
做額外的工作 而你的雇主被迫
無法幫助你完成工作 所以 也許你沒有得病 但社會病了 你會在乎的 所以我們還有一絲希望嗎 不管人們吃不吃糖
有什麼有效的行動是他們可以做的嗎 第一要務就是教育大眾 在大眾被教育之前
是無法有什麼影響整個社會的介入手段的 但是 教育從未解決過
「致癮物質濫用」的問題 我們有鴉片類藥物濫用危機時
南西.雷根的「向毒品說不」有成功嗎 說到底
會致癮的物質就是會致癮 所以你可以學到知識 關於這種成癮物質
會毀了你的健康 你的生活、你家人的生活
還有你周圍的每個人 而你卻束手無策 因為它令人上癮 這就是定義 因為生物化學作用
強過任何你試圖對抗它的努力 這就是上癮的定義 所以光靠教育
是沒有辦法解決這個問題的 然而 你沒有辦法讓整個社會力量介入 也無法動員任何一種政府的力量 來改變整個社會 除非大眾已經都有這方面的知識 而且願意投入改變 過去三十年
發生了四次文化上的結構性轉變 廁所內販售保險套 腳踏車安全帽和汽車安全帶 酒駕 在公共場合抽菸 三十年前以上的任何一個
都是個棘手難題 如果有任何人提出來
尤其是政治人物 他們肯定會被恥笑
下次再也選不上 因為這些都是自由權益 這是大眾有權利去做的事情 但現在呢
不再如此了 事實上
藉著教育大眾這幾個議題 我們才能夠搖動原本的
公共衛生戰場 才能讓社會力量
介入這幾個相關領域 這才是公共衛生該有的運作方式 所以現在我們有了知識
也有了研究數據 關於糖和它的毒性 它被濫用的狀況、它的無所不在 還有它對整個社會負面的影響 在某個層面它已經符合
所有需要被規範的條件了 現在問題是
規範該如何制定 目標對象是誰 要如何進行 而最終
誰會受益 誰會損失 這些都是還沒提出來討論的問題 因為我們還沒將大眾教育好 我出現在這個影片中的理由 就是要教育大家
還有你頻道的聽眾和觀眾 因為他們一旦了解 就會照做 也宣導這個觀念 所以 The Institute for Responsible Nutrition

(Responsible, Epicurean, Agricultural, Leadership) 目前整個田納西州
都已經參與了他們的認證 該州的健康部門 還有42間田納西州的餐廳
已經獲得REAL認證 所以當你去這些餐廳用餐 你知道端上來的是什麼食物 這是餐廳的真食物認證 IRN也發展出一套
針對超市食物的認證 當你看到這個認證標誌 你就知道不管裡面裝什麼
都不會對你有害 我們辦了很多場教育性的聚會
努力用各種不同的方式倡導 我們做了一部公共電視紀錄片 片名叫做「甜蜜的報復」 你可以在線上租片
或是買DVD來看 它會告訴大家
食物供應鏈到底出了什麼差錯 要如何靠自己逆轉糖尿病 我是說逆轉 就是指逆轉 不是只有治療 而是要逆轉 第二型糖尿病是可以逆轉的
只要夠早發現的話 如果你已得了10年
那又是另一回事了 但如果你是最近才得了第二型糖尿病
你是可以逆轉它的 但在肝臟復原前你是無法逆轉的 而如果你不改變飲食
你是無法讓肝臟復原的 如果明天你是一日領袖
決定所有大小事 任何事你說了算 你會怎麼做
有什麼是你會拿掉的嗎 第一件我會做的事
就是停止糧食補給方案 現今沒有任何一種食物需要補給方案 食物補給方案源自於

把第二型糖尿病這個字 改為它真的代表的意思
「加工食品疾病」 直呼其名 再來 我會要求醫院
禁止販賣或提供汽水 就像我們在加大舊金山分校做的
我們有「健康飲料措施」 因為醫院應該是
良好行為的典範 醫院是第一個禁止吸菸的地方 所以人們會了解
這樣是對健康有益的 所以我會讓整個國家都如此
所有的醫院都禁止含糖飲料 還有從許多小地方做起 如果我們繼續這樣下去
最糟的情況會是如何 摩根史坦利為我們解答了那個問題 去年他們發表了一篇報告
你可以在網路上找到 名稱是「糖的餘韻:苦樂參半」 那是2015年三月發表的 他們模擬比較了 美國的經濟成長在低糖的情況 和在高糖的情況
也就是我們現在的情況 看有何差別 在低糖的情況下 他們得到的結果顯示
平穩的2.9%的經濟成長 而在高糖的情況下 他們得到的結果是
到了2035年 經濟成長率來到0% 那就是最糟情況 目前世界上有4.12億的糖尿病患者 那是全球人口的7% 而若我們什麼都不做 到了2030年
那數字會來到7億人 而你剛剛說的公共健康保險 那時將不會有公共健保
或任何醫療保險 因為聯邦醫療保險會在2026年破產
除非我們逆轉這些慢性疾病 這麼說吧 食品工業一年總收入是1.46兆美元 其中45%是毛利 那是一年6570億的毛利 而醫療照護每年花費3.2兆美元 其中75%是花費在
照顧慢性代謝疾病患者 而在其中 若我們改變飲食
75%的疾病是可以避免的 所以3.2兆美元裡的75%的75% 那是1.8兆美元 浪費了 白白浪費了 我們損失的是食品工業賺的三倍 這不是永續的方法 得有人退讓 我想不出更好的結尾了 謝謝你空出時間

Later you are in favor of using force on free individuals if they refuse to wear a seat belt or helmet. You decide for us all what's best for us. Central planning, with you in the middle.   3. If you have type 2 Diabetes, you should sue Betty Crocker. All of her quick, easy to prepare meals, like potatoes au gratin, noodles almondine, mac and cheese, hamburger helper and tuna helper. That would also include cake mix, brownie mix, etc. These are processed foods to avoid.

Trick or treat night was invented by Satan…that's when all the children eat lots of candy and get addicted and when they become adults, they can't give it up and develop chronic diseases.The children become obese from the sugar and the adults do also. We need a new law…no candy, just apples, celery, dates, and dark chocolate, but no M&M's or other sugar-coated candy. Bye bye, Halloween…you will be a fond memory.

  5. I have spent the last month listening to and Evaluating all the different ways of eating. Paleo, Ketogenic, Vegan, Whole food plant based, starch diet and one or two others, I have come to the conclusion that, a whole food plant based diet with about 20% of Calories coming from animal products is the best way to go. (I have been eating like that for the past 16 years. Was 110 Kg when I started and today I am 65 Kg)I also feel That Dr Lustig is the most sane of all the "PREACHERS", as he is the least fanatical about what to eat, and makes the most sense about what not to eat

  6. Dr. Robert Lustig in one of the few people in this country that should be hailed as a true and authentic and veritable hero. He is certainly my hero.
    Although I am a typical loner in my daily life, my awareness of belonging to the invisible community of those who strive for truth, beauty and justice has prevented me from feelings of isolation.

  7. Dr. Lustig's claim is that it's the fructose in sugar causing fatty liver and metabolic syndrome in general. I have some doubts about this. Yes, pure sugar are added empty calories but do they do all the harm he claims? I don't think so. Why? Well, take just one example of the Banana Girl. She'll eat 20 bananas a day plus other fruit. A can of coke have roughly 16 grams of fructose and 20 bananas have as much fructose as eight cans of coke. I never heard of any fruiterian that had fatty liver disease and I doubt Freelee the Banana girl has a fatty liver or metabolic syndrome from sucking down all that fructose. Raw vegans eat a massive amount of fruit a day in the order of near 3,000 calories and their fruitose intake exceeds the fructose amount in ten cans of coke yet they don't have metabolic problems, let alone a fatty liver. Yes, all that fruit has fiber, but the liver doesn't see fiber and as far as it is concerned it makes no difference how much fiber the body sees. Fiber is for the colon. The doctor needs to come up with a better theory. The reality is that excessive calories cause the problem. That's why the vast majority of metabolically damaged people are fat. A calorie is a calorie no matter who says it isn't.

    the dose makes the poison. The comparison to alcohol is appropriate except that small amounts of alcohol are beneficial. Fructose seems to be only beneficial in terms of enjoyment of food.
    The Cousin of Dose is Rate. the experienced dose is dependent on the rate of absorption and rate of metabolism. HFCS can be argued to be worse than sugar because the rate of fructose absorption is higher than sucrose or non processed fruit. The Argument against fructose needs to address the change in the dose of fructose Humans have experienced.

Alcoholism is an addiction and it can be stopped, but people have to be motivated to get the help to stop. I think public health CAUSED this problem. Some claim that the fiber slows your body's ability to absorb the sugar, but when you blend it, juice it or cook it, the fiber breaks down and you get a blast of sugar. It's little wonder all vegans are not diabetic (though I suspect most are, to a degree, and just haven't tested themselves for it). Modern plants are far more nutrient dense thanks to selective breeding. This used to be a good thing, back when food was scarce. But it's not scarce anymore. It doesn't take a nutritionist to see where this is going.

  22. not true, I never ate crap food and I was borderline due to excess weight. As soon as I lost weight I was out of the danger zone. Never ate processed anything or restaurant foods.

  23. Cook whole foods, veggies and meats at home and ditch every single processed food. Kind of like our elders used to eat. Natural foods which included fats, proteins and veggies. This is how my grandparents ate and my grandmother on my mother's side lived to 94. Both grandparent's on my father's side lived to 94 and 95 years old. They ate naturally and ate little sugar. 95 is good enough for me.

In western nations, diabetics are usually obese because of malnutrition caused by living on cheap, processed foods devoid of nutrients. He knows exactly what is going on and I can hear it in the tone of his voice that he is beyond frustrated that this sugar addiction has gotten out of control not only with our children, but society as a whole. Folks, I don't buy the notion that our government made a "mistake" back in the 70s when they portrayed fat as the food boogey man responsible for heart disease. I know a correlation is not proof of causation, but why is it that when the fat was removed from most super market foods, to cater to a fat frightened population, and sugar was added to compensate and to keep the food palatable, that all of a sudden new cases of degenerative diseases started to go up at an alarming rate? We are in the information age and there is no excuse to not do your own research to take command of your health. Inflammation and all the diseases that derive from it are no joke! Even people that saved money and have health insurance go broke paying 20% of super expensive medical bills. In the USA, the average cost that a hospital bills an insurance company for a heart bypass is $117,000 USD. 20% of that $23,400 USD that the patient has to pay out of his or her pocket! In a consumer driven society where most people don't have any savings, this means that you will be in debt for a very long time, or be in debt for the rest of your life. And that is just the financial burden a person goes through aside from the disease itself that doctors treat but never cure, because that isn't their business. The medical and pharmaceutical industry learned their lesson many years ago when they cured polio by realizing that there is no residual revenues in cures.

  26. 28:14 made me laugh hard! I believe it! I live in Houston and once visited a brother from church at one of Houston's biggest hospitals in the world famous Texas Medical Center. He was there to get some type of catheter on one of his aorta's close to the heart, or something along those lines. When someone from the cafeteria dropped off the menu so that he can order his dinner, I was amazed at the selections that included cheesburgers and pizza. I kid you not!

    He was the first doctor to explain why, despite following the recommended guidelines to the letter, and being in caloric deficit my entire adult life, my weight just kept going up and up and up. He was the first to explain how I put on weight while on Weight Watchers, despite following it to the letter too and walking 10 km a day, carrying 30 kg doing it (and that wasn't my daily workout — that was just going to and from school; my 'proper daily exercise' was over and above that). Without even meeting him, he was the first doctor to believe me (so to speak) when I said I don't over-eat and never have, and I don't eat crap and never have, because he – and he alone – explained how both were indeed possible, while everyone else was just calling me a liar.

    So now my once little waist has stopped expanding and is beginning to get smaller, despite my age; the heart that was about to blow up in my face began to get better, seemingly overnight; but my liver is taking a little longer to repair, and thankfully he came along before my allegedly "perfectly healthy" diet progressed to Type 2 diabetes as well (and here's the thing ~ I'm not morbidly obese and I never have been. I'm just over-weight).

    In my opinion he deserves a Nobel Prize.

  40. Of course diabetes would be an Egyptian word. The Ancient Egyptians were among the first to get diabetes. They didn't have cane sugar or High Fructose Corn Syrup. They did have dates, figs (very sweet fruits) plus honey. That's enough to give you diabetes if you are susceptible. The more fructose you eat, the more likely you are to get sick.

    I've been following an approach similar to his and have reversed type 2 diabetes to the point where it's diagnostically undetectable. Both a surgeon who recently cut me up and an eye doctor who looked at the back of my eyeballs both told me that they did not see any signs of type 2 damage.

    I cut carbohydrates out of my diet and started eating real food.

    Other interesting things happened. I stopped having chest pains, my energy levels evened out, ED went away, and i started working out.

    I've been eating a low carb diet for 6 years now and there's no turning back, for me.

  47. I love sugar! I stay away from it more often than not. I have always been able to eat whatever I wanted for a meal or snack…no problems. In my late 70s and I do not have any medical issues. Even so, I am learning to stay away from sugar because of what it does to our bodies. Yes, OCCASIONALLY, I will get a few baked goods and after taking my first bite and taste, I immediately recognize the addicting nature it has on me…and my wanting more. So, my "goody" tasty things are few and far between. I will pay $5 or $6 for a SLICE of cake or pie rather than pay $3 for the whole cake or pie. I also have noticed the SLICES are SMALLER and selling for MORE money! THAT will probably break me of my love for sweets more than anything else.

  48. I say as a mathematician Ph.D that Dr. Lustig is worthy of a Nobel Prize for bringing us this
    awareness. His explanations helped me self-diagnose and completely recover from metabolic syndrome, high blood pressure etc. All that sugar was killing me!

    2 weeks after I quit all foods with added sugar my arthritis went completely away.
    Lots of other miraculous improvements in my life.

    But I give my God the glory for showing me the Straight and Narrow Way back to health.
    I went back in time about 20 years. The strength of my youth returned, stamina as well.

  51. I am on disability for Sugar Disease. My Mom had it and so did her mom. Lots of Alcholics in my family and the doctors in my family deny it! BUT there kids are on ADHD meds and have cancer at three years old.
